Ingredients:
For the Beef:
2.5 lbs beef chuck roast
1 large onion, chopped
4 cloves garlic, minced
1 tbsp tomato paste
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp ground cumin
1 tsp smoked paprika
Salt and pepper, to taste
2 tbsp olive oil
For the Rice:
1.5 cups long-grain rice
2.5 cups water or broth
1 tsp turmeric or saffron (optional, for color)
Salt, to taste
1 tbsp butter or oil
For the Flatbread (optional shortcut: store-bought naan or pita):
2 cups all-purpose flour
3/4 cup warm water
1 tsp salt
1 tbsp olive oil
1 tsp baking powder
Instructions:
Prepare the Beef:
Heat olive oil in a Dutch oven. Sear the beef on all sides until browned. Remove and set aside.
In the same pot, sauté onions and garlic until soft. Stir in tomato paste, cumin, and paprika. Cook 1–2 minutes.
Return beef to the pot, add broth and Worcestershire. Season with salt and pepper.
Cover and cook on low for 3–4 hours (stovetop or oven) or 8 hours in a slow cooker, until beef is fall-apart tender.
Shred with forks and stir into the sauce.
Make the Rice:
Rinse rice until water runs clear. In a pot, bring water or broth to a boil. Add rice, salt, and butter/oil.
Stir once, lower heat, cover, and simmer for 15–18 minutes. Let rest for 5 minutes, then fluff with a fork.
Cook the Flatbread (if homemade):
Mix flour, salt, baking powder, and water to form a dough. Knead until smooth. Rest for 20 minutes.
Divide and roll into rounds. Cook on a hot skillet for 2–3 minutes per side until puffed and slightly charred.
Assemble the Plate:
Plate the shredded beef with its sauce, a mound of seasoned rice, and a slice of flatbread.
Optionally, serve with a glass of sweet milk tea or a creamy yogurt drink, and a side salad with lemon.
Garnish:
Sprinkle chopped parsley or cilantro over the beef before serving.
