The corn salad dish has been prepared with fresh lime juice, ground cayenne as well as frozen corn kernels to nourish the taste
The Black Bean & Corn Salad adds nice colour and flavour. Begin to prepare the dish
Ingredients:
- ½ cup olive oil
- ⅓ cup fresh lime juice
- 1 clove garlic, minced
- 1 tsp salt
- ⅛ tsp ground cayenne pepper
- 2 (15 oz) cans black beans, rinsed and drained
- 1 ½ cups frozen corn kernels
- 1 avocado, diced
- 1 red bell pepper, chopped
- 2 tomatoes, chopped
- 6 green onions, sliced
- ½ cup chopped fresh cilantro
Instructions:
1. Combine olive oil, lime juice, garlic, salt, and cayenne in a jar and shake until mixed.
2. In a bowl, mix black beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro.
3. Pour the dressing over the salad and toss to coat evenly.
4. Serve and enjoy!
